A microbial endopeptidase preparation with broad substrate specificity for processing extracted collagen and gelatin. This enzyme can be used to efficiently hydrolyse beef, pork and fish extracted collagen and gelatin to increase solubility, reduce viscosity and produce lower molecular weight peptides.
