Biocatalysts – Problem over

Enzymes are incredibly versatile natural chemicals for solving problems in food processing and the Biocatalysts team is here to make your life easy. Across many sectors of the food industry the same type of problems can occur and for most of these Biocatalysts has a solution to solve your problem. As often in life most problems are not new and our team of sector experts will help you solve your processing problem quickly and efficiently. Here are some examples of typical problems:

Filtration problems – these are most commonly caused by polysaccharides, but can also be caused by proteins and phospholipids. If you tell us your process (just the basics, not all the details) then we will advise which enzyme to use and how to use it. Easy for you and removing a filtration problem means faster product throughput and that means increased factory capacity.

Waste removal or upgrading – Generally there is no such thing as waste, your waste will have value to someone else it is just a matter of identifying the valuable components and knowing how to extract. Many parts of an animal normally considered waste, have a very high value eg heparin extraction from pig and cow intestines; or chondroitin sulphate extraction from bovine trachea. So instead of paying for waste removal, we can help you to upgrade it and identify potential customers because, to someone else, it has a high value. So turn a cost into an income and increase your company’s profits.

Increased yield – throwing away too much of your raw material gives you a waste disposal cost and reduced factory throughput (or you spend too much on building a larger factory). Why throw away your raw material when often enzymes can increase the extraction efficiency and give your process a higher yield. This gives you a double profit gain. So you can achieve increased yield and reduced waste in one process upgrade. For example, the yield in apple juice production can be increased from around 70% to >90%.

Save energy – enzymes work at low temperatures and hence, can allow you to operate your process at a lower temperature and save energy. For example carrot juice manufacture without enzymes has to be done at a high temperature (>100°C) whereas with enzymes, you can get more yield at a much lower temperature. Operating processes at lower temperatures saves energy and money. We can help you operate a ‘greener’ process and increase profitability.

Improve quality – with food, flavour and texture are the two key components. Foods and drinks with better quality flavours are preferred by consumers and can be sold for a premium. Many flavours are bound up in foods in an inert form. Biocatalysts enzymes can help release them to give a fuller flavour, higher quality product. For example, many grape varieties for making wine contain high levels of inert bound flavours. Biocatalysts enzymes can help release these and turn a medium quality wine into a good quality wine enabling the product to be sold at a premium.

Differentiate yourself from the competition – are you using the same enzyme as your competition? If you have the same starting material and the same enzyme, you will end up with the same product as your competition. And no product differentiation means a lower selling price and reduced profits. Biocatalysts can help to make your product different (and better) compared to your competition. So your own sales team can start selling a product on more than just low price.
